Charles-Eric Vilain XIIII, graduate in oenology, presents his champagne Vilain XIIII - produced in the Champagne region, France and officially recognized by the CIVC. What makes this champagne unique is that it is at the same time a Blanc de Blancs (using only Chardonnay, the grape variety that provides the most finesse and elegance), a Grand Cru (featuring the best terroir), and also an Extra Brut (so with very little sugar). The vineyards are located in Oger, in the heart of the Côte des Blancs, classified as one of the 17 Grands Crus of Champagne. The grapes are hand picked, pressed on traditional wooden presses, and vinified by hand. The result matures slowly for nearly 3 years and is a blend of reserve wines from 2015 and 2016.
