This savoury pancake is a healthy and nutritious snack to enjoy any time of the day. It is rich in minerals, vitamins, essential fatty acids and amino acids - which means that in addition to its benefits to your skin and hair, as well as to your immune, digestive and cardiovascular systems, it also encourages the production of the satiety hormone. Therefore, you nurture your body AND you avoid cravings!
Ingredients
- 120-125 ml of rice milk
- 25g of chickpea flour (or another vegetable flour)
- 25g oatmeal (or another cereal of your choice)
- 10g of almond powder (walnuts, hazelnuts, pistachios and cashews are also suitable)
- 5g of flax seeds
- 5g of hemp seeds
- Spices: curry, turmeric, pepper, oregano, cumin, mint, etc. You can use these according to your taste, but we recommend a total amount of around 1g
- 20g of Scimudin (Italian cheese)
- Gomasio for seasoning (mix 2 tablespoons of sesame with 1g of salt)
Preparation
1. Place all ingredients, with the exception of the cheese and gomasio, in a blender. Mix until you obtain a fluid and smooth paste.
2. Pour a few drops of oil into a non-stick pan and heat it over medium heat.
3. Pour the batter into the pan, making sure to cover the entire bottom of the pan – either with swift movements or using the back of a spoon.
4. Cover and cook over low heat for a few minutes.
5. Flip the pancake using the pan lid or a spatula to cook the other side, and sprinkle with cheese and gomasio to taste.
6. Turn the heat off, but leave the pancake in the pan - with the lid on - for a few more minutes before serving.
